      Yuca w/ Tomatillo Sauce

      Ingredients:

      • 2 lbs Yuca root
      • 1 8-oz package Tomatillos, husked and simmered until tender
      • 1 Jalapeo chili, seeded and stem removed
      • 3 cloves Garlic, minced
      • 1/4 cup Cilantro leaves, washed
      • 1 medium onion, peeled and quartered
      • 1/4 cup water
      • Salt and pepper to taste

      Directions:

      1. {}Rinse and peel yuca. {}Cut lengthwise, remove core & slice.

      2. {}Place in a large sauce pan, cover with water. {}Bring to a boil. Reduce heat, simmer 20-30 minutes or until tender. Remove from water when done

      3. {}Salt and pepper to taste. Keep warm.

      4. {}Meanwhile, in a food processor or blender combine remaining ingredients and process until smooth.

      5. {}Serve sauce over Yuca.

      Serves 4-6.
