      White Bean Chicken Chili

      Ingredients:

      • 2 tbsp Olive oil
      • 1 large Onion
      • 4 large Garlic cloves
      • 1 tbsp ground Cumin
      • 1 tsp dried Oregano
      • 1/2 tsp dried Red pepper
      • 1 lb Chicken meat, picked from bone
      • 3 16-oz cans Great Northern Beans
      • 1 cup Chicken broth
      • 1 7-oz can diced Green Chilies
      • 1/2 cup Whipping cream
      • Sharp Cheddar cheese, grated
      • Fresh Cilantro, chopped

      Directions:

      1. Chop onion and garlic.

      2. Cut up chicken in to bite size pieces.

      3. Saute onions, garlic, cumin, oregano and dried red pepper in olive oil for 5 minutes. {}Push aside and add chicken and saute for another 5 minutes.

      4. Add beans (with liquid), broth, chilies and cream, simmer until chicken is tender - about 10 minutes.

      5. Top with cheese and cilantro.
