      Voodoo Chicken Salad

      Dressing Ingredients:

      • 2 tbsp Dijon mustard
      • 2 tbsp Lime juice, freshly squeezed
      • 2 tbsp Chili paste
      • 1 tbsp Red pepper, crushed
      • 1/3 cup Mayonnaise
      • 3/4 cup Sesame or Extra virgin olive oil
      • 1/2 cup White wine vinegar
      • 1/4 cup Soy sauce
      • 3/4 cup Sugar
      • 2 tbsp Garlic, peeled
      • 2 tbsp Ginger, peeled

      Salad Ingredients:

      • 2 grilled Chicken breasts, cubed and skin removed
      • 2 tbsp Feta cheese (optional)
      • Salt and pepper, to taste
      • Paprika

      Directions:

      1. Place Dressing ingredients in blender or food processor and process until smooth.

      2. Serve over cubed, grilled chicken breasts arranged over crisp lettuce.

      3. Sprinkle with Feta cheese.

      4. Dress up the dish with halved Cherry tomatoes or Tomato wedges.{}

      5. Sprinkle with Paprika for color.
