      Tomato Pie

      Tomato Pie By: Chef Emerald Coleman

      Ingredients:

      • 1 9-inch Pie Shell - prebaked for 9 min.
      • 1/2 medium Red Onion - chopped
      • 4 large Tomatoes - halved, seeded, juiced and chopped
      • 1/4 cup Basil - sliced
      • 2 cups Cheese - grated (can be single cheese variety, or mixed variety)
      • 3/4 cup Mayonnaise
      • 1 teaspoon Hot Sauce
      • Salt & Pepper to taste

      Directions:

      1.{} Preheat oven to 350 degrees.

      2.{} Squeeze as much moisture as you can from chopped{} tomatoes.

      3.{} Sprinkle the bottom of the prebaked pie shell with the onions.{} Next spread the chopped tomatoes and basil in the shell.

      4.{} In a medium bowl mix together the mayonnaise, cheese, hot sauce, and salt & pepper.

      5.{} Spread mixture over tomatoes and bake until browned and bubbly, about 30 to 40 minutes.
