      Salmon Croquettes

      Ingredients:

      {}

      • 1 pound fresh Salmon, poached and cooled
      • 1/4 cup Red onion, small dice
      • 1/4 cup Red bell pepper, small dice
      • 3 Tbsp Cilantro, chopped
      • 1 Tbsp Sriracha Asian Hot Sauce
      • 2 Tbsp Mayonnaise
      • 1 Egg, beaten

      Directions:

      1. {}Preheat oven to 350 degrees.

      2. {}Once poached salmon has cooled, flake and break up salmon into a medium sized bowl.

      3. {}Add all remaining ingredients and mix well.

      4. {}Separate salmon mixture in to 4 portions and form into patties.

      5. {}Place patties on baking sheet sprayed with pan spray and put into 350 degree preheated oven for approximately 20 minutes.

      6. {}Remove and serve.
