      Mexican-Style Summer Salad

      Ingredients:

      • 3 tbsp fresh Lime juice
      • 1/2 tsp Salt, plus an additional 1/8 tsp
      • 4 small Tomatoes, diced
      • 3 medium Avocados, diced
      • 3 Scallions, thinly sliced
      • 1 large clove Garlic
      • 1 tbsp Olive or vegetable oil
      • 1/4 tsp ground Cumin
      • 2 heads Boston lettuce, torn into large pieces
      • 1 small Cucumber, peeled and quartered
      • 2 tbsp fresh Cilantro, coarsely chopped

      Directions:

      1. In medium bowl, whisk together 2 tbsp lime juice and 1/2 tsp salt.

      2. Add tomatoes, avocados, scallions, and garlic. {}Use rubber spatula to gently combine. {}Season with pepper and set aside.

      3. Whisk together oil, cumin, 1 tbsp lime juice and 1/8 tsp salt.

      4. Add lettuce and toss.

      5. Divide lettuce among plates and top with mound of avocado mixture.

      6. Sprinkle with cucumber and cilantro and serve.
