      Cranberry Salsa

      Ingredients:

      • 1 cup dried Cranberries
      • 1/2 cup fresh Orange juice
      • 1/2 cup Cucumber,{}peeled, seeded, and diced{}
      • 1/2 cup Red onion,{}diced{}
      • 1/4 cup fresh Cilantro,{}chopped
      • 1 Garlic clove, minced
      • 1 Jalapeno pepper, seeded and diced
      • 1/4 cup fresh Lime juice
      • 1/2 tsp. ground Cumin
      • 1/2 tsp Salt

      Directions:

      1. Soak Cranberries in Orange juice in a bowl for 30 minutes.

      2. Stir in Cucumber and remaining ingredients. {}Cover and chill.
