      Celery, Carrot and Apple Salad

      Ingredients:

      • 3 Carrots, grated
      • 1 Celery heart, thinly sliced
      • 2 Apples, peeled, cored, and thinly sliced

      Dressing:

      • 3 tbsp Lemon juice
      • 1 clove Garlic, crushed
      • 2 tbsp Tahini

      Directions:

      1. {}To make the dressing, place the lemon juice, garlic, tahini and 3 tablespoons of water in a food processor and blend until smooth. {}Alternatively, combine with a fork. {}Season to taste

      2. {}Toss together the carrots, celery heart and apples and transfer to individual serving bowls. {}Drizzle over with dressing.
